You may be able to jump on any horse in the wild, but taming it and making it your own requires patience and can lead to unlocking unique actions. Horses spawn in plains and savannahs in a variety of colors and once you’ve found one that you’d like to tame, your next step is to mount it and get thrown off a couple of times in succession until you see hearts over the horse meaning it has been tamed.

Get them close to the boat and walk into them repeatedly to 'push' them towards it. It might be easier if you use a lead on them and guide them directly into it, though. [links]
Make the boat stuck so it doesn’t move then push it into the boat. Best if you trap boat in a 2x2 and walk onto the boat with the lead to the other side of where the horse is to lead it in.
I don't want to give out misinformation as I don't have any proof that Mojang intentionally removed mobs entering boats, so I've removed the update section of this answer. [links]

I found a horse but it's across an ocean and quite far away. Is it possible to transport horses in boats? I would love to know this before I make another journey back to the horse only to have it be a bust when I get to the beach. more
Haven't tried horses, but cows fit in! Without testing it I'd say they do, but even if they don't, you can drag them about with a leash. I do find it irritating that horses can't traverse rivers with throwing you off. But I guess cowboys had the same trouble! more
