Tasting Notes
Appearance: Pale yellow gold with lots of very tiny bubbles.
Aroma/bouquet: Apricots, peaches, fresh baked bread with subtle minerality, honeysuckle and nutty notes.
Palate: Apricot tart,rich tropical fruit along with pear and apple. Honey and campfire smokiness along with signature minerality. Velvet mouthfeel.
Additional comments: Elegant and very balanced.
When to drink: Dom Perignon 2002 Champagne is ready to drink, but for the best showing, wait a few years. Drink now through 2028.

Dom Perignon 2002
Production
Dom Perignon uses the méthode champenoise for their champagne production. Fermentation occurs entirely in stainless steel tanks with cultured house yeast strains and full malolactic fermentation. Dom Perignon does not use any Pinot Meunier in their blend. There is an emphasis on the balance between the Pinot Noir and Chardonnay and the assemblage often be very close to 50% Pinot Noir and 50% Chardonnay, but overall composition varies with each vintage and can range from approximately 40% to 60% of each grape. The main objective is to include individual component wines that are representative of cru terroir at the highest level. [links]

As a result, when the big houses finally started releasing their prestigious 2002 vintages some 8-10 years post harvest, it caused equal amounts of hype, celebration, excitement and grossly inflated prices. Considered then and now as easily the best vintage since 1996 (also known as the vintage of the century), prices for the 2002 vintage were steep at release and have certainly continued to rise in subsequent years.

A quick sniff of the cork, however, revealed no off aromas but rather an extremely subdued mix of citrus, butter and yeast. Reassuringly, the content of the bottle poured into the glass bright and vibrant, full of bubbles and life. more

Paradoxically concentrated yet creamy, it is energetic and warm in the mouth, focusing on the fruit, then gradually taking on more profound bass notes. The whole holds its note perfectly, intensively, with just a subtle, elegant hint of underlying bitterness. here

The first hints of fresh almond and harvest aromas immediately open up into preserved lemon and dried fruits, the whole rounded off by darker smoky and toasted qualities.
