Since the trim gauge has a center mark, shouldn’t the proper trim be just a tad negative from center? more

If I want to get absolute top speed out of a hull, I will trim farther out from the sweet spot, but then steering effort becomes hard and you are losing efficiency with thrust. On some hulls, it's worth the tradeoff to lift the hull out of the water with some of the thrust, as it relieves drag. On others, not so much. Beware when doing this, as many hulls become twitchy and unstable, and may want to chine walk (which can get out of control and cause the boat to go sideways with disastrous results). I only ever play with that on glassy water, in very short bursts.

Look for the trim setting mechanism just below the motor tilting hinge on the outboard. This is normally a series of holes in the motor and lower unit hinge brackets through which a stainless steel pin is inserted. here

Adjust the trim slightly up or down once the boat is at cruising speed. If the trim is adjusted too far up, the boat will begin to “porpoise” as the bow starts to bounce up and down across the water. If the trim is adjusted too far down, the bow will start to plow into the waves, noticeably slowing the boat. here
