An unopened bottle of hot sauce easily lasts months, if not years past that date. Once you open the bottle, the condiment should easily retain its taste for a few months if stored at room temperature, and much longer if you refrigerate it. Again, it's impossible to say for how long your hot sauce will taste great.

It turns out that you do not need to refrigerate hot sauce after opening the bottle. That's right. You can safely store hot sauce in your pantry or cabinet at room temperature for literally years. But if the color of your hot sauce is important to you, pop that bottle in the fridge. here

It is up to each individual chain to determine which varieties they want to stock. Stores do listen to customer requests, especially when they come in large volumes, so we encourage customers to talk to their local store manager and request more varieties on the shelf.

This variation is one of the things that makes hot sauce so exciting (and is why so many people have dozens of different bottles of the stuff), but it also means you need to treat each one differently in terms of whether or not you should refrigerate it. more

And yes, tomatoes are a fruit. If your hot sauce of choice has a base of or contains pieces of tomatoes, carrots, mangoes, pineapples, other fruits, or chili oils, you should keep them in the refrigerator. Those ingredients spoil more quickly than vinegar-based hot sauces when left out. [links]

The truth is, it depends on the sauce’s ingredients, source, and how quickly you use it!

Not all hot sauces are created equal. That’s because not all hot sauces are made the same. Unlike condiments like mayonaise, which almost always has the same base, hot sauces vary wildly in terms of ingredients. more
